A Russian Dessert:

Apple Pie (Sharlotka)

Ingredients:

3 eggs
3 sour apples
220 grams sugar
240 grams flour
1 tsp baking powder.
1 tsp bicarb of soda.
1 tsp Cinnamon
lemon juice.

 
Method:

Preheat the oven to 180 degrees C and line a baking tin with Parchment paper. Peel and core the apples and slice into thick chunks.


Toss the apples in a bowl with 1 tsp of cinnamon, sugar a lemon juice.


Combine the eggs and sugar in a bowl and gradually add the sifted flour. 


Place the apples on top of the parchment in the baking tin.


Pour the mixture into the lined baking tin and bake for 50 minutes.



Turn the baking tin upside down on a plate and open the tin to release the cake. Let it cool and dust with powdered sugar.



This cake was really moist and it had a lovely gooey apple centre. It had a chewy crust but it made a nice contrast to the soft sponge and cooked apples.
